Pokémon Starters – Bulbasaur Salad

This green salad packs a serious punch with a zesty dressing! Packed full of iron and vitamins, you can add other greens or vegetables to suit your taste or take out what you don’t like! A handy and healthy snack, this makes a great lunch served with a toasted sesame seed bagel or bulk up your portion and add some cooked fusilli pasta for dinner!

Salad: Mixed salad leaves (lettuce, rocket, water cress, spinach) 3 sticks of celery, 5 radishes, half a cucumber, one spring onion, one small head of broccoli. Mixed seeds and grains.
Dressing: 1/4 cup extra virgin olive oil, a tablespoon of fresh squeezed ginger juice, juice of half a lemon, tablespoon of dark soy sauce.

PROCESS

If you can’t make salad then you can’t train Pokémon! This Bulbasaur salad is ideal for anyone inexperience in the kitchen; you’ll only need a sharp knife, a big bowl to serve and a sealable container for your dressing.

Start by tossing your salad leaves together, then chop your vegetables. I like to cut my cucumber and radish into thin round slices and chop the celery into chunks. Slice the spring onion into small pieces and chop the stalk off your broccoli. Chop the rest of it into small florets and then toss the veg into the salad leaves.

For the dressing measure out your liquids, I added a dash of cracked black pepper to give a small kick to it (it really doesn’t need any extra kicking!). Combine all of it together in the sealable container, I used a small lunch box container, then shake the living daylights out of it. Pop it in the fridge to chill for about 10 minutes.

Drizzle as much as you want over your salad and serve. For lunch I accompanied my Bulbasaur salad with a bagel and garnished it with a handful of mixed seeds and grains.
